Watermelon Pizza

Oh yum!  One of my favorite fruits is in season and I love making this dessert.  I definitely have a sweet tooth, but I do my best to curb my sweet cravings with delicious and healthy sweets.  This recipe does the job perfectly.  So, next time you are wanting something sweet, but don't want to over indulge in a sugary dessert, make this.  You will love it!



1 watermelon, sliced (slice into big cirlces)

3/4 cup coconut yogurt

1/2 cup blueberries

1/2 cup strawberries

1/2 cup pomegranate seeds

Fresh mint

2 tablespoons honey



1. Lay out your watermelon slices.

2. Spread the coconut yogurt over the watermelon.

3. Sprinkle the fresh fruit and mint leaves over the yogurt.  You can choose your favorite fruits to use.  The fruits above are just my personal favorites, but there are several delicious combinations you can create.

4. Drizzle the honey over your entire creation.

5. Slice the watermelon into triangles, just like a pizza.  Enjoy!

Cucumber Roll-Ups

Spring is finally here and the weather is amazing outside.  I love to have refreshing snacks and lunches to eat so I can head outside and enjoy a picnic at the park.  You know those foods that just really satisfy all your cravings?  I want to give you an easy recipe that is a go-to around my house.  It has few ingredients and takes just minutes to create. 



1 cucumber, sliced

1/2 pound turkey, sliced thin

2 tablespoons plain Greek yogurt

1 teaspoon lime juice

cilantro, chopped



1. Lay out your sliced cucumber.

2. Lay turkey slices onto the cucumber.

3. Spread the yogurt over the turkey.

4. Squeeze the lime and sprinkle the cilantro over the yogurt.

5. Roll the cucumber and the rest of the ingredients into a tight ball.

6. Stick a toothpick into the cucumber to hold everything together until you are ready to eat!

Avocado Toast

Who loves avocado?  Me! I do, so much!  This is a wonderfully delicious breakfast, snack or lunch that I enjoy often. I hope you enjoy this as much as I do.  Avocados are very nutritious too.  They are full of potassium and vitamins.  They are loaded with heart-healthy monounsaturated fatty acids and fiber.  Avocado is also easy to incorporate into your diet!  Here is a recipe that includes an avocado.  Enjoy!



2 slices of bread (any kind of bread you prefer)

1 avocado, sliced

2 tablespoons plain cream cheese

1 teaspoon lemon pepper



1. Toast your 2 slices of bread.

2. Spread your cream cheese evenly over each piece of bread. 

3. Place you sliced avocado on top of the cream cheese.  I use the whole avocado for both pieces of bread.

4. Sprinkle the lemon paper over the avocado and enjoy!

Frozen Yogurt Bark

Are you looking for a delicious and easy snack to eat while the heat of the summer is starting to come?  This is so yummy and really hits the spot on a warm day.  I love making it in the beginning of the week and then eating it throughout the week.  Snacks that can be pre-made are the best.   It helps me be successful in eating healthy when I know that I already have a delicious snack ready for me.  I know that if I have to make the snack, it is easier (sometimes) to just grab something quick that isn't as healthy.  So, this is just perfect.  It is something that I can make Sunday afternoon and enjoy during the busy week ahead.  Plus, this snack is great for kids and adults!  You can create so many different variations of the frozen yogurt bark too so you can constantly mix it up and enjoy it week after week. 



2 cups of your favorite Greek yogurt (I love honey vanilla)

1 cup of your favorite fruit (I love strawberries)


Optional Ingredients: Don't be afraid to try to new ingredients, that's why the frozen bark is so great- there are unlimited combinations!

Dried Fruit




Maple Syrup Drizzle


Chocolate Drizzle

Sea Salt



Chocolate Chips



1. Line a baking sheet with parchment paper.  You don't want the yogurt to stick!

2. You have two options and they are equally tasty!  Option One:  Spread your yogurt evenly over the parchment paper with a spatula (about 1/4 inch thick).  Sprinkle your toppings over the yogurt.  Option Two: Place yogurt and toppings in a bowl.  Mix ingredients together evenly.   Spread the mixture evenly over the parchment paper with a spatula.

3. Place in the freezer for a minimum of 5 hours.  Once frozen, break the pieces apart and enjoy!  Store in a airtight container in the freezer for later enjoyment.

Easy Chicken Fajitas

Are you ever looking for an amazing meal that has little to no prep?!  I am!  I always hunt for the easiest and most delicious meals.  Having 2 kids while cooking can be a little challenging so the easier, the better.  Plus, this recipe also has very few dishes.  How much better can it get?  I'm telling you this meal is easy and great.  Sometimes when we make it for other people they are shocked at how easy it is to make.  This is also another meal that pairs well with cilantro lime rice.  I love rice with tacos and fajitas.  Here's the recipe for you!



1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

2 teaspoons sea salt

1 pound chicken breast, sliced into strips

2 tablespoons coconut oil, melted

1 red bell pepper, sliced

1 green bell pepper, sliced

1 red onion, sliced

2 limes



1. Preheat the over to 400 degrees Fahrenheit.

2. Mix all the spices together in a bowl and set aside.

3. Put all of your chicken and veggies in a baking dish. 

4. Pour the melted coconut oil over the chicken and veggies.

5. Sprinkle the spice mixture over everything and coat evenly.

6. Bake for 35 minutes.

7. Find your favorite tortillas and fajita toppings to complete your meal.

Pan Cooked Potatoes

I have another side dish for you this week.  This one is something that I discovered while getting tired of eating baked potatoes.  Cooking can get a little redundant sometimes so I love breaking out and creating new dishes to enjoy.  I know there are so many ways to cook potatoes, but I have found that often times I end up eating an unhealthy recipe.  These potatoes I have eaten for breakfast, lunch and dinner!  I mean, not in the same day, but that's how good and versatile they are.  They pretty much go with anything and are a staple in my house.  So enjoy!



2 potatoes (you can choose any kind of potato you like)

1 1/2 tablespoons olive oil

1/2 tablespoon fresh rosemary

2 cloves minced garlic

1/2 teaspoon garlic powder

salt and pepper to taste



1. Thinly slice your potatoes and set aside.

2. Heat the olive oil in a pan on the stove.

3.  Add garlic and cook until fragrant (about 2 minutes).

4. Add the potatoes and cook until they are at your desired tenderness.  If you slice the potatoes thin, they will cook more quickly. 

5.  Add the seasonings and mix evenly.

6.  Serve immediately!

Cilantro Lime Rice

Here is a side dish that I love making at least once a week.  Sometimes, I eat my cilantro lime rice with fish, tacos, chicken or simply as a side to any protein I make for dinner.  It is easy and just so delicious. 



1 cup cooked white jasmine rice

1/3 cup chopped cilantro

1 tablespoon fresh lime juice

1/2 teaspoon salt

1/2 teaspoon garlic powder



1. This one is easy!  Combine all of the ingredients into a bowl and mix well.

Peanut Butter Banana Roll-Up

I am a huge peanut butter lover.  I can put it on almost anything from apples to waffles to sandwiches.  When trying this recipe, I recommend finding a healthy peanut butter.  There are several peanut butter products that have way too much extra and unnecessary ingredients inside.  I always find the peanut butter that has one ingredient, peanuts.  The other ingredients like salt, sugar, and oil may seem like trivial amounts, but you just don't need it included.  So, opt for the healthy peanut butter!  Back to the recipe, I often eat this as a quick snack in between my meals.  It is easy to make and can also be a mess free on-the-go snack. 



1 Flatout Flatbread

1 1/2 - 2 tablespoons peanut butter

1 banana

1/2 tablespoon honey



1. Spread peanut butter and honey on your Flatout Flatbread.

2. Slice the banana into thin slices and spread over peanut butter and honey mixture. 

3. Roll the Flatout into a taco and enjoy!

Baked Green Beans

I love vegetables so much!  I am always looking for new ways to enjoy the same vegetables I eat.  Green beans are one of the best!  They are packed full of vitamins too.  I enjoy eating them raw, steamed, baked or stir-fried.  Though, I like green beans all of those ways, I love them baked in this recipe.  I combined some of my favorite things and it made a delicious recipe.  Follow it below!


1 1/2 pounds fresh green beans, rinsed and ends cut off

4 cloves garlic, minced

1/2 white onion, chopped

6 slices of bacon

1 1/2 tablespoons of olive oil

sea salt




 1. Preheat the oven to 350 degrees

2. Place green beans in a bowl and pour the olive oil over them.  Mix to coat the green beans evenly.

3. Mix in onion and garlic, stir.

4. Place green beans on a lined baking sheet.

5. Sprinkle salt & pepper to your liking.

6. Cute the bacon into small pieces and sprinkle over the green beans.

7. Place baking sheet in oven and cook for 17-20 minutes.  Mix halfway through baking.

8. Serve and enjoy!

Cilantro Jalapeno Hummus

I love hummus!!  It's so easy to make!  Have you ever tried to make it at home?  I know it is available at the grocery store too, but if you create your own, it doesn't have preservatives and it feels good to make the food you are eating.  I always feel more accomplished when I create a recipe for my family too.  I tend to order hummus for an appetizer at restaurants when we go out to eat.  One day, I realized that I can probably create my own at home.  Plus, when I eat it at home, I can create a whole tray of food to dip in the hummus.  Here's my favorite hummus recipe!  I hope you enjoy it!



2 cups canned garbanzo beans

3/4 cup cilantro

2 jalapenos (with or without seeds depending on how spicy you would like it to be)

1/4 cup lemon juice

2 tablespoons olive oil

5 cloves of garlic

6 tablespoons tahini

salt to taste



1. In a blender, blend the cilantro, jalapeno, garlic, olive oil, tahini and lemon juice.  Blend until the ingredients create a smooth pureed mixture.

2. Add the salt and garbanzo beans and continue to blend until you have created a smooth paste.  You can always add more olive oil or lemon juice to thin out your hummus.

3. Serve with your favorite pita chips or pita bread.  I love to use carrots, tomatoes, zucchini, cucumbers and broccoli too!

Apple Cookies

I seem to always be looking for a tasty snack a few hours before dinner.  I end up throwing something together to satisfy my hunger.  If I keep these healthy ingredients around the house, I'll end up eating a healthy snack.  So, here's some ingredients to keep around so you can make a quick snack that will satisfy your hunger and its extremely delcious!   



1 apple (My favorite apples are honeycrisp, but you can use any apple for this)

1/4 cup Natural Peanut Butter

1 tablespoon unsweetened coconut flakes

1 tablespoon dark chocolate chips

1 tablespoon walnuts, chopped



1. Cut the apple into slices about 1/2 inch thick.

2. Spread the peanut butter evenly over the sliced apples.

3. Sprinkle the topping evenly over the peanut butter.

4. Enjoy!

Cupid's Vanilla Berry Smoothie

Valentine's Day is just around the corner and like most of us, you will probably indulge is some delicious Valentine's chocolates or other yummy treats.  I will be enjoying a delicious home cooked meal and homemade dessert!  I don't really enjoy fighting the crowds out there for dinner.  Do you love holidays as much as I do?  I love to do a whole Valentine's themed day on February 14th.  I think kids usually love to enjoy all of the holiday fun too!  Here's a quick and easy recipe that I make in the morning along with some heart shaped pancakes.  It's starts the day with some extra love for everyone!


Frozen OR Fresh mixed berries (I usually do strawberries, raspberries and cherries)

1/3 cup of ice

8 oz. unsweetened vanilla almond milk

1/2 cup plain or vanilla Greek yogurt

1 teaspoon honey



1. Place all of the ingredients into a blender.

2. Blend until smooth.

3. Pour into your favorite cup and enjoy!

Super Bowl Nacho Bar

Super Bowl Sunday is coming!  Are you hosting a party at your house?  Are you going to a party?  This is an easy snack to create!  You can cater it to your liking too, that is one thing I love about these nachos.  Most people can find a way to create their nacho plate and enjoy it.  Nachos aren't always the healthiest thing to eat, but if you try to keep most of your ingredients healthy, you can eat these guilt free.  Now, head off to the store and grab what you need for these and enjoy one of the greatest football games of the year.  Even if you are you not interested in watching, you can make these for another event!


Bag of chips (I like Tostitos Simply Natural Corn Tortilla Chips)

1 lb. ground turkey cooked and seasoned

Your favorite cheese

Your favorite salsa

Tomatoes, diced

Jalapenos, sliced

Black Olives, sliced

Avacado, sliced

Green Onion, diced

Black Beans

Plain Greek Yogurt (Instead of Sour Cream)



1. Place each ingredient in a separate bowl.

2. Each person can grab a plate and fill their plate with the ingredients they would like to create the perfect plate of personalized nachos.

Cilantro Lime Chicken Tacos

I know I said chips and salsa are my favorite food.  Well, tacos...that's my second favorite.  These tacos are probably the easiest recipe I've ever made and also one of the best.  The slow cooker is one the best kitchen appliances I own.  It's so great being able to throw dinner in it in the morning and hours later having dinner already ready to eat!  You know what else is great about it?  You can always make extra so you have leftovers because the leftover chicken is amazing.  Follow these simple steps to create some delicious tacos.


2 boneless skinless chicken breasts

1 tablespoon garlic powder

1 teaspoon cumin

1 teaspoon salt

1/2 teaspoon smoked paprika

1 1/2 cups 505 green chile sauce

1/2 cup cilantro

2 limes, juiced



1. Place your chicken breasts at the bottom of your slow cooker.

2. Sprinkle the seasonings evenly over the chicken.

3. Cover with 505 green chile sauce and lime juice.

4. Lastly, sprinkle cilantro on top.

5. Cook on low for 6-7 hours.

6. Once your chicken is done, remove from slow cooker and shred the chicken with a fork.  It should shred easily.  Use the juice from the slow cooker to moisten the chicken to your liking.  I usually add about 3/4 cup of juice.

7. Now, find your favorite tortilla.  Place your chicken in the tortilla and top with all of your desired toppings.  I usually use corn tortillas and top of my taco with cheese, avocado, salsa and lettuce!

Banana Chocolate Chip Muffins

I love breakfast foods, but I find that there are a lot of unhealthy options out there.  Sure, it is quick and easy to make muffins out of a box.  However, wouldn't you rather eat a muffin that still tastes great and is also healthy?  Theses muffins are still easy to make and you don't have to feel guilty eating them.  My favorite time to make these is on a morning when I get to sleep in and head to the kitchen in my pajamas.  Then, I can sip of some delicious coffee and create these yummy muffins.  Here is the recipe!


2 medium bananas, mashed

6 eggs

1/4 cup plain Greek yogurt

1 teaspoon pure vanilla extract

1 cup unsweetened vanilla almond milk

1/4 cup pure maple syrup

2 tablespoons coconut oil

1 1/4 cups coconut flour

1/2 teaspoon baking powder

1/2 baking soda

1 teaspoon cinnamon

1/2 salt

1/2 cup dark chocolate chips




1. Preheat the oven to 350 degrees.

2. Place muffin liners in your muffin tin.

3. Put your mashed (mash them until they are smooth) bananas into a mixing bowl and add in the eggs, yogurt, vanilla extract, almond milk and maple syrup.

4. Next, mix the flour, baking powder, baking soda, cinnamon and salt into a separate bowl.

5. Slowly add the flour mixture into the banana mixture until combined.

6. Finally, stir in the coconut oil.

7. Pour the batter into the muffin liners until they are evenly filled. 

8. Place your muffin tin in the oven for 20-24 minutes until golden brown on top.

Roasted Cauliflower

I love vegetables, but sometimes I get bored with them.  I am always looking for new ways to create a delicious tasting veggie!  It sure is easier to eat healthy when you enjoy the taste of what you are eating.  I have made some mistakes in the kitchen before...I think the flavors all sound good together and then when I actually eat it, it's not yummy at all!  Have you ever done that?  I recently tried incorporating cilantro with broccoli.  Okay, I guess now that I'm typing it, it doesn't really sound that great together.  I love cilantro so much and wanted a new broccoli recipe.  So, naturally, I decided to put them together.  I added other spices and created a new broccoli recipe.  Only, it was horrible.  Oops!  I went ahead and tossed that recipe in the trash.  Now, let's get back to point, I have a wonderful cauliflower recipe to share!  I decided to take a break from broccoli recipes.  For my cauliflower recipe, you have to love garlic.  I would say that 90% of the things I cook in my kitchen include garlic somehow.  I definitely recommend buying fresh garlic too.  Not only does it taste better than the garlic in a jar, it has no preservatives.  Finally, after all that, here's my cauliflower recipe.  It's a great side dish to any meal! 


1 head of cauliflower, washed and chopped

2 fresh garlic cloves, minced

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes

2 tablespoons olive oil



1. Preheat oven to 425 degrees.

2. Combine all ingredients into a bowl and mix together to coat the cauliflower evenly. 

3. Place the cauliflower onto a greased baking sheet.  Spread it all out so they aren't overlapping.

4. Put in the over for 20-25 minutes until golden and tender.

5. Serve and enjoy!

I must admit, chips & salsa is probably one of my favorite things to eat.  I mean, I've told my husband that instead of bringing me fresh flowers for Valentine's Day, he should stop and grab some chips & salsa!  He knows anytime he wants to make me smile, he has to get me some chips& salsa.  The thing is, I am picky about my salsa.  I don't really like store bought salsas and trust me, I have tried many.  I have found that I can make salsa that is fresh and delicious on my own.  It's pretty simple to prepare and make.  I know there are so many salsa recipes out there, but this is favorite.  Give it a try, tell me what you think and tell me about your favorite salsa.  I would really love to try your favorite recipe for homemade salsa.  I am sure there are some more combinations of ingredients that I would love!  Please go share your salsa recipes!  Tag @hbgcommunity and use the hashtags #hbggirls and #hbgblog.  Here's my recipe!


1/3 cup cilantro, chopped and fresh

3 garlic cloves

1 4.5 ounce of green chilies (I like spicy)

1 jalapeno, chopped

1 red onion, chopped

5 tomatoes, chopped

3 tablespoons fresh lime juice

salt and pepper to taste

1 teaspoon sugar



1. Combine all ingredients into a blender or food processer.

2. Puree until your desired consistency.  I like my salsa to be smooth so I blend it until it is smooth.  It's going to taste yummy no matter how chunky or smooth it is!

3. Enjoy with chips, veggies or on top of your favorite food!

Bacon Wrapped Brussel Sprouts

This week, I'm not sharing a completely new recipe.  I'm sharing a wonderfully delicious side dish that you can bring and enjoy at any family gathering.  Or enjoy at home by yourself!  If I haven't already said it enough, I love veggies!  A lot.  I love Brussel sprouts and this is a yummy way to serve them.  This is a great appetizer or side dish and it's easy to make.  So, along side those cookies from last week, add this to your menu. 


10 slices of bacon

10 Brussel sprouts

wooden toothpicks

Salt & Pepper OR brown sugar & maple syrup



1. Preheat oven to 400 degrees.

2. Cut your sprouts in half.

3. Cut each slice of bacon in half.

4. Wrap one piece of bacon around each sprout snuggly.

5. Secure with a wooden toothpick.

6. Place each one on a lined baking sheet.

7. Sprinkle the sprouts and bacon with salt and pepper to your liking.  If you want them sweet, you can sprinkle brown sugar and maple syrup to your liking.

8. Place in the oven for 15 minutes.

9. Remove from the oven and gently turn them over.

10. Place back in the oven for 15 minutes or until the bacon is crispy and the sprouts are tender.

Peanut Butter Cookies

Ahh...this time of year always comes with so many sweets.  I love cookies, but most cookie recipes are full of bad ingredients.  Not that you can't indulge in them sometimes, but I always feel much better when I am eating a healthier version of a cookie.  Also, I absolutely love peanut butter.  So, these cookies are just the best.   


1 cup blanched almond flour

1 tbsp coconut flour

1 tsp baking powder

3 tbsp peanut butter

Dash sea salt

4 tbsp melted butter

3 tbsp raw honey

Dark Chocolate Hershey's Kisses

Coarse sea salt (optional)



1. Preheat oven to 350 degrees.

2. Combine first 5 ingredients.

3. Add the melted butter and honey.  Mix well.  I use a Kitchen Aid mixer so the ingredients are combined well.

4. Place 1-inch balls on lined cookie sheet.

5. Bake cookies for 10 minutes or until cooked through.

6. While the cookies are baking unwrap the Hershey's kisses.

7. Remove and quickly press a Hershey's kiss into the center of each cookie.  If you want to sprinkle sea salt over top, do so once you are done with the chocolate.

8. Let cool and enjoy!!

Mango Salsa

I absolutely love most fruits and vegetables.  Sometimes, I want to include some fruit into my meals so I can eat something sweet without dessert after!  This mango salsa is so yummy.  I love it because you can add it to so many different things.  You can put it on all kinds of proteins, dip chips in it, top off a baked potato and even just eat it by the spoonful.  I am super guilty of that!  My favorite is adding this mango salsa on top of mahi-mahi. 


1 mango- peeled and diced

1 avocado- peeled and diced

Handful of cilantro

1/4 cup chopped red onion

1/4 cup chopped red pepper

1/2 - 1 whole jalapeno finely diced (depending on how spicy you like)

Juice of 1 lime

Salt & Pepper to taste


1. In a medium bowl, mix all ingredients together.

2. Stir evenly.

3. Enjoy!
